Raita (Yogurt Dish)








    Raita is a yogurt dish that Indians love to compliment their meals
    with.  It has a cooling effect when you eat it with other spicy
    preparations.
    Following is a basic Indian Raita recipe :
    2 Cup plain yogurt
    ½ Cucumber finely grated
    1 teaspoon Mint powder ( if you have fresh mint you can grind it
    to make a paste)
    ½ teaspoon black salt (Rock salt that you can get in Indian stores)
    ¼ teaspoon salt
    ½   teaspoon roasted ground cumin powder (the way you prepare
    this is roast cumin seeds on a skillet and after they turn brown
    grind it. It has a nice aroma)
    1 inch fresh turmeric root finely chopped
    Mint leaves or Coriander leaves to garnish



    Mix the yogurt well. You could add about ½ cup of water if the
    yogurt is too thick. Add grated cucumber,mint powder/paste,
    black salt, salt, turmeric root and roasted ground cumin powder
    and mix everything well, garnish it with mint leaves or coriander
    leaves. Enjoy.
