Meshed Eggplant with Turmeric (Baingan Bharta)

    Ingredients
    1 large purple egg plant
    1  onion finely chopped
    1 green chili
       3 or 4 thinly sliced tomatoes
    1/4 tsp red chilli powder
    1 tsp turmeric powder
    1 tsp coriander powder
    ½ tsp cumin powder
    Salt to taste
    1 tablespoon finely chopped ginger
    ½ tsp cumin seeds
    2 tablespoon oil (Olive or Sesame)
    Chopped  fresh coriander to garnish

    Preheat oven at broil. Prick the eggplant with a fork few times so
    that steam does not build up inside. Place the eggplant on the upper
    rack and put a aluminum foil to catch any drip on the lower rack,
    and broil it for 45 minutes until the skin becomes black or burned.
    Remove the eggplant in a bowl and scoop it out, throw the burned
    skin away. The eggplant should be thoroughly cooked and be soft.
    Mash it well. You can do this with a potato masher or a fork.


    Now heat oil in a pan, and add cumin seeds, when it turns brown
    add chopped onion and sauté it, add ginger, garlic, green chili, and
    sauté until light brown, add turmeric,  chili powder, cumin powder,
    coriander powder and salt. Cook some more. Add sliced tomato and
    cook for few minutes. Add meshed egg plant and mix it well.
    Garnish it with fresh cilantro and a delicious dish with turmeric is
    ready to eat with chapatti and raita.
